How to cook it

  • Microwave 7–8 min
  • Air fryer 180°C, 25 min
  • Steamer 15 min
  • Fine to eat skin and all

Fluffy and nutty → Soft and sweet Early in curing it's fluffy and nutty; as curing goes on it gets softer and sweeter.

  • Kept until

    Keep in a cool, well-ventilated place. Refrigeration stops the curing.

  • For longer storage

    Scoop out the seeds, cut, wrap in plastic and freeze.

  • Appearance

    Yellow patches and scratches on the skin come from touching soil and leaves in the open field and don't affect the taste.

Bouchan variety

  • A mini chestnut-squash variety that's hard to find in supermarkets.
  • It tends to be juicier than regular kabocha — fluffy early in curing, softer and sweeter as curing goes on.

Prep and cooking

  • Scrub with baking soda and scoop out the seeds with a spoon.
  • Microwave 7–8 min · air fryer 180°C, 25 min · steamer 15 min
  • You can eat it skin and all. Try: kabocha porridge, kabocha eggslut, kabocha salad
Recipe: soup with cured kabocha

Kept until

  • Keeps for about 15 days in a cool, well-ventilated place.
  • Refrigeration keeps it longer but stops the curing. For long storage, remove the seeds, cut, wrap in plastic and freeze.
